Recipe: Barbecued Chicken
Ingredients
- Chicken – 2 Whole
- Onion – 2 Grated
- Oregano – 2 bunches chopped
- Lemon Zest – 2 Tablespoon
- Garlic – 8 Cloves crushed
- Green Chilli – 2 chopped
- Olive Oil – 1/3 cup
- Salt and Pepper – To Taste
Instructions
- Wash and clean chicken.
- With a sharp pair of scissors, cut along the sides of the backbone and remove them.
- Flatten the chicken.
- Season it with salt and pepper.
- Place oregano, lemon zest, garlic and onion into a bowl and mix well.
- Spread it over the chicken and marinate for 10~30 minutes.
- Preheat a barbecue plate or grill. Lightly grease it with oil. Barbecue the chicken skin-side down for 10 minutes or until it is browned and a bit charred. Flip it over and cook it for another 15 minutes or until it is done.
