Mexican Bean Salad ingredients

  • Kidney Beans 1 14 oz can
  • Haricot Beans or cannellini beans 1 14 oz can
  • Sweet Corn 8 oz can
  • Red Bell Pepper 1
  • Fresh Green Chili 1
  • Onion 1
  • Coriander 1 bunch
  • Garlic 1 clove
  • Salt to taste
  • Pepper to taste
  • Tomato deseeded 1
  • For the dressing:
  • Limes 2
  • Salt to taste
  • Pepper to taste
  • Caster sugar 1/4 tsp
  • Oregano 1 tbsp
  • Olive oil 4 tbsp

How to make Mexican Bean Salad

  • Drain the corn and beans and set besides in a bowl.
  • Chop the green chillies, onion, red pepper, tomato and combine with the beans.
  • Now season with salt and pepper.
  • For Bean Salad Dressing beat the oil, zest of 1 lime, oregano, lime juice, sugar, salt and pepper until well mixed.
  • Fill over salad toss, mix well and allow this to sit for 15 to 20 mins.
  • Garnish with coriander, Mexican Bean Salad is ready to serve.

Cook Time: 15-20 mins
