Mexican Bean Salad ingredients
- Kidney Beans 1 14 oz can
- Haricot Beans or cannellini beans 1 14 oz can
- Sweet Corn 8 oz can
- Red Bell Pepper 1
- Fresh Green Chili 1
- Onion 1
- Coriander 1 bunch
- Garlic 1 clove
- Salt to taste
- Pepper to taste
- Tomato deseeded 1
- For the dressing:
- Limes 2
- Salt to taste
- Pepper to taste
- Caster sugar 1/4 tsp
- Oregano 1 tbsp
- Olive oil 4 tbsp
How to make Mexican Bean Salad
- Drain the corn and beans and set besides in a bowl.
- Chop the green chillies, onion, red pepper, tomato and combine with the beans.
- Now season with salt and pepper.
- For Bean Salad Dressing beat the oil, zest of 1 lime, oregano, lime juice, sugar, salt and pepper until well mixed.
- Fill over salad toss, mix well and allow this to sit for 15 to 20 mins.

Garnish with coriander, Mexican Bean Salad is ready to serve.
